PEA AND MINT SOUP
Pea & Mint soup
Ingredients:
- 1 tablespoon olive oil
- 1 onion, chopped
- 2 cloves garlic, minced
- 2 cups frozen peas
- 1.5 Lvegetable broth
- 1/2 cup fresh mint leaves
- 1 courgetti, chopped
- Salt and pepper to taste
Instructions:
1. Heat the olive oil in a large pot over medium heat. Add the chopped onion and garlic, and sauté until they become translucent, about 5 minutes.
2. Add the frozen peas and courgetti to the pot and continue to cook for another 2-3 minutes.
3. Pour in the vegetable broth and bring the mixture to a boil. Reduce the heat, cover the pot, and simmer for about 10 minutes, or until the peas are tender.
4. Remove the soup from heat and stir in the fresh mint leaves.
5. Use an immersion blender to puree the soup until smooth. If you don't have an immersion blender, you can carefully transfer the soup in batches to a regular blender to puree, then return it to the pot.
6. Season the soup with salt and pepper to taste. Adjust the seasoning as needed.
7. Reheat the soup over low heat if necessary before serving.
8. Serve the pea and mint soup into bowls and garnish with additional mint leaves, croutons, or a dollop of sour cream if desired.
